My favorite catch today !

I met today, Gilles, the bartender of Harry's New York Bar and ask him the recipe of a cocktail. I must apologize to Jessica because we spoke French. Gilles is a French guy who works for ages in American places but hates speak English ??? He will be retired in one year and be happy to not have to speak this awful langage (according to him, obviously I don't share this opinion !) But it's still a nice guy, very useful for this clue.
